AGR 175 - Introduction to Viticulture


3 Credit(s)

This course provides a comprehensive introduction to the science and practice of grape growing (viticulture) with specific emphasis on production in the Midwest United States. Students will explore varietal selection, vine anatomy and physiology, the annual growth cycle, site selection, vineyard establishment and management, pest and disease control, and sustainable production practices. The course combines classroom instruction with hands-on field experience in local vineyards.

Course Learning Outcomes:
CLO 1) Students will analyze major Midwest grape varietals, including their characteristics, growing requirements, and wine production potential.

CLO 2) Students will evaluate site selection criteria for Midwest viticulture, including climate, soil, topography, vineyard establishment principles, and trellis system design appropriate for continental climate conditions and shorter growing seasons.

CLO 3) Students will evaluate the annual growth cycle of grapevines and the vineyard management techniques used throughout the season, including pruning, canopy management, pest and disease control, and harvest timing decisions.

CLO 4) Students will assess vine health and diagnose common viticultural challenges in the Midwest, including winter injury, fungal diseases, and pest management.

CLO 5) Students will evaluate the impact of viticultural decisions on grape quality and wine characteristics, demonstrating understanding of how vineyard practices influence sugar levels, acidity, flavor development, and overall fruit composition.

CLO 6) Students will describe sustainable and economically viable viticulture practices specific to small-to-medium scale Midwestern vineyards, including considerations for environmental stewardship, regional regulations, and market demands.
